Forest ecosystems exhibit many beneficial properties we humans could stand to emulate in our culture, agriculture, and horticulture: 
  • They maintain, renew, fertilize, and propagate themselves without human inputs. 
  • They build, store, and conserve clean air, clean water, nutrients, soil quality, and biodiversity.
  • They exhibit stability, resilience, and adaptability.

These qualities emerge from the dynamics of the forest as a whole system, not from any one or more of the elements that comprise the forest alone.  To design productive edible ecosystems that express these same qualities, we must understand forest structures, functions, patterns, and processes, and use this knowledge wisely.

In this nine-day intensive course, you will dive deeply into the vision, theory, and practice of designing wholesome, dynamic, and resilient edible ecosystems using temperate deciduous forests as models. Dave Jacke and his teaching team will offer lectures, site walks, and experiential exercises to help you understand how the architecture, social structure, underground economics, and successional processes of natural forests apply to the design of edible ecosystems of all kinds.  You'll learn a variety of ecological design processes while designing a range of food-producing ecosystems at the Mas Pujou site. We'll also engage with issues of garden management, economics, and the deep paradigmatic shifts required to succeed at cocreating “humanatural” landscapes and cultures.  You will leave inspired and empowered to design food forests at home for yourself, and your friends, neighbors and clients.

INSTRUCTORS - Dave Jacke is the lead author of the award winning two-volume book Edible Forest Gardens. Dave has been a student of ecology and design since the 1970s, and has run his own ecological design firm -Dynamics Ecological Design in Montague, MA, USA - since 1984. Dave is an engaging and passionate teacher of ecological design and permaculture, and a meticulous designer. In addition to extensive teaching, he has consulted on, designed, built, and planted landscapes, homes, farms, and communities in the many parts of the United States, as well as overseas. A cofounder of Land Trust at Gap Mountain in Jaffrey, NH, he homesteaded there for a number of years. He holds a B.A. in Environmental Studies from Simon's Rock College (1980) and a M.A. in Landscape Design from the Conway School of Landscape Design (1984). Juliette Olshock, M.S., M.Ed., studied sustainable agriculture and permaculture design at Slippery Rock University in Pennsylvania, USA and completed a permaculture apprenticeship at the Finger Lakes Permaculture Institute. She is an adjunct professor with Chatham University’s Food Studies program, teaching about sustainable agriculture, permaculture and forest garden design.  She was instrumental in designing and implementing the Hazelwood Food Forest in Pittsburgh, PA, and has since designed and built multiple food forests.

Our Host site Mas Pujou:

We will be based in the beautiful, stone, rural house of Mas Pujou with spectacular views of the natural surroundings.
Mas Pujou is situated near the historic Roman town of Olot, in the stunning La Garrotxa natural volcanic area. Surrounded by fields, forests and within walking distance of La Fageda d´en Jordá, the house offers a special opportunity to be away from urban distractions, to enjoy peace whilst listening to the sounds of nature, see the stars and if you are lucky, hear the owls at night!

Its a 10 ha site with mostly regenerating Oak Forest. There are some vegetable gardens, chickens and sheep too on site!

The interior of the house allows access to rooms of common use (such as dining room, living room, showers and bathrooms, etc). There are also different places outside with beautiful views of the landscape from the terraces.
The closest neighbourhood is the Barri de Bonavista (2 kms away) where you can find shops and services.
 
During the course we aim to take advantage of this beautiful and peaceful setting, spending as much time outside as possible.
 
ACCOMMODATION and FOOD: 
Rooms are mainly shared and dormitory style. There is a few double and one single room available for an extra charge. We will serve three delicious, vegetarian meals per day, organic, grown in the veggie garden or locally sourced, and prepared by the team at Mas Pujou with lots of love!
 
And of course we shall enjoy plenty of tea breaks with fruit and light snacks.

PAYING FOR THE COURSE:  We offer this course on a sliding scale basis: € 900-1,200 all inclusive (except your travel, of course),with anything paid above the bottom of the sliding scale going to scholarships.  Please be generous to those in need if you can afford it!  Residents of Spain, Greece, Portugal and the majority world (non-US, non-Canada, non-Europe) can take the course for € 800 if their income is low. Scholarships are also available on an application basis.

SCHOLARSHIPS –Any course fees paid by any student over € 900 in the sliding scale will be added to the existing scholarship fund! If you are in need of a scholarship, please register for the course, pay the deposit (fully refundable to scholarship applicants if they cannot afford the course), and submit a letter (as a .pdf, please) in which you answer the following questions to [email protected]:

Community-Supported Forest Gardener Program - Scholarship applicants and anyone interested in financial assistance with the course should consider creating their own Community-Supported Forest Gardener Program (CSFG). This is a way for you to get community support for your education, and to return value to your funders after the course is over, while practicing what you learned in the course!
